THE HARVEST

A time farmers used canvas bags which, presented the defect of
damaging the olives during the transport. It's very important
that the olives are maintained well ventilated and not
subjected to crushing during transport
before pressing.

Hand picking can be done in two ways:

- In the parts of olive-yard that are flat we can use a big net around the tree. With hands or with the special plastic rakes the olives fall on the net(now exist also a special kind of electric rakes);

- In the parts of olive-yard with steep slopes we use the "cutuio" that is an half sack,
open by a stick of wood, kept at the neck in where the olives fall inside. Once the tree hasn't more olives, we move the harvest in rigid airy boxes,no higher than twenty centimeters.
