For centuries, olive cultivation is practiced on our land with the kind of Monocultivar Moraiolo,always recognized as a product of excellence. This variety was also important for the maintenance of the characteristic Umbrian landscape.
The etymology of the name "moraiolo" comes from the walls of stone that once were built for having natural terraces,
ideals for the cultivation of olive trees.
Moraiolo is a plant difficult to grow. It suffers the cold and it's very sensitive to the frosts. It gives good productions one year out of three. It suffers humidity and for this reason is planted on land with a great sun exposition. The excessively rain can ruin the harvest. The growth of the tree and the start of its production is very slow.
It needs years before it reaches a size and a significant production. A mature tree can
make about 30 kg of olives, in the year of maximum production . The oil that is
derived from its olives is from twelve to eighteen percent.
It needs at least two prunings in every year for keeping the tree in a situation of good
production.
The branches are shorts and very complicated to develop.
The tree needs air and sun around and inside it self for its health and for having a good harvest. Prunings too strong can make damages for many years but a
overlooked tree can't produce good olives. It produces small olives that are hard to pick up, because resistants to detachment. Therefore pruning and harvesting
can only be done by hand.
The most wonders why,the oldest manufacturers had chosen this kind of variety of olive trees with many difficulties of breeding and management. The answer is because the olive oil Moraiolo can be defined the scent of the true olive oil of our territory. It is a variety of high quality, since it is able to provide an exclusive olive oil of absolute value. During second half of 1900 there were big frosts that killed many olive trees moraiolo.So many farmers have chosen trees more resistant and more productive,but they changed the flavor of the olive oil. Not so for our family who always believed in this extraordinary variety of olive tree, also with all its difficulties. For this reason we continued to implant moraiolo trees or replace dead trees with other moraiolo trees.
This olive oil is unique and special for the high concentration of polyphenols. The lovers of this variety know the taste so fruity, slightly bitter and slightly spicy.
Our land is exceptional for Moraiolo 100% olive trees, thanks to the placement at an altitude of 400-500
on sea level and to a mild climate. The soils are of stone and ideal for the
cultivation of this special variety,rich in antioxidants.
